After a long long time I’m back to update this bloggeh!
Today’s topic = food.

Nicoise salad
This is a salad that originated from France.
Yummy looking no?
Ingredients include: raspberry vinegarette, mixed greens, tuna, potato, long beans,black olives, capsicum and cherry tomato.
Garnish: Parsley,anchovy, egg, red Spanish onion and Parmesan crisp.
Next up will be Chicken Piccata.

Its an authentic Italian dish, very rustic.
For the chicken ingredients used include: Chicken breast(duh!), 3 eggs(lightly beaten), 250 gm flour, 100 gm Parmesans cheese( grated)
For the sauce: water 150 ml, 1x garlic(crushed), 1 clove, 1 bay leaf, diced celery and carrot( about 50 gm), capers 5gm, cream 20 ml , butter 2 sticks of 20 gm, 15ml of lemon juice,
3 lemon rings, sauteed onions 25 gm and shitake mushroom (I didn’t add it this time because our chef didn’t order any.).
Make a veg stock with carrot, celery, garlic, clove and bay leaf first, turn off fire after colour of stock change slightly.
Then pane(coat) your chicken with flour then into eggwash and finally into a flour/ Parmesan mix (1:1)
Pan-fry chicken until golden brown.
Add chicken into stock, switch on fire.
Sautee onions and mushrooms then add into stock.
Add cream, capers, 20gm of COLD butter, 3 slices of lemons, 15 ml of lemon juice and then simmer the sauce.
Once it thickens, remove chicken and lemon rings and off fire, then put in the other 20 gm of COLD butter and mix it in the sauce and make sure the butter mixes
properly with the sauce .
Serve chicken with sauce over it, remove clove, bay leaf and garlic(seriously, because no one likes those things in their mouths)
